Region : Vaucluse in the town of Sainte Cécile-les-Vignes
Grapes: 100% Syrah
Terroir : Stony and clay-limestone.
Vinification: Traditional fermentation with temperature control, vatting for 20 days, then aging for 12 months in 300 liter oak barrels, of which 1/3 in new wood.
Tasting notes : Distinguished, silky tannins, great aromatic complexity, spicy, fruity, liquorice and vanilla.
Matching Food : Red or white meats grilled or in sauce, stews, game and cheese
Serving temperature: 16 to 18 °.
